Potato Boats
- 3 large baking potatoes
- 1/2 c. green beans (can)
- 1/2 c. carrots (can)
- 1/2 lb. ground beef
- salt to taste
- 1 small onion, chopped
- 1/2 c. whole corn (can)
- 1/2 c. peas (canned)
- 3 Tbsp. oil
- pepper to taste
- Cut potatoes lengthwise to make boats.
- Using a spoon, scrape raw potatoes to scoop out a well in potatoes, leaving about 1/4-inch thick shell.
- Brown ground beef and drain off grease. Cook the potatoes you scraped out with the onion in the oil until brown.
- Mix all the cooked vegetables and ground beef.
- Put potatoes in baking dish.
- Spoon mixture into the well of the potato boat.
- Pour 1/2 cup water over and around potatoes.
- Cover and bake at 375u0b0 for 30 minutes or until potatoes are done. Serves 6 people.
