Pan-Fried Bitter Melon and Pork with Miso
- 200 grams Pork
- 1 stalk Bitter melon
- 1 tsp Soy sauce
- 1 tsp Katakuriko
- 2 tbsp Miso (soy bean paste)
- 1 tbsp Sugar
- 1 tbsp Sake
- 1 tbsp Mirin
- 1 tsp Doubanjiang
- 1 tbsp Sesame oil (for frying)
- 1 Dried Bonito flakes
- Cut the bitter melon lengthwise.
- Carefully remove the seeds and slice.
- Boil for about 30 seconds in hot water, and drain.
- Cut the pork into bite-sized pieces.
- Marinate with the seasonings.
- Mix all the ingredients to make the miso paste.
- Heat sesame oil in a frying pan and stir-fry the pork from Step 2.
- When the pork has browned, turn the heat off, add the miso paste, and mix well.
- When the pork has combined well with the miso paste, turn the heat on again.
- Cook over medium heat.
- Finally, add the bitter melon from Step 1 and after thoroughly mixing in the miso it's done.
