Cinnamon Granola Bars
- 1/4 cup butter softened
- 1 cup brown sugar, light packed
- 1 each eggs
- 2 tablespoons ground flax seed or 1 Tbs. vegetable oil
- 2 tablespoons honey
- 2 cups rolled oats
- 1 cup flour, unbleached all-purpose
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 cup raisins, seedless
- 1 cup powdered sugar
- 2 tablespoons water
- Preheat oven to 350F (180C); spray or grease an 11 x 7 baking dish.
- In a large bowl with electric mixer, beat butter and brown sugar until creamy, about 2 minutes.
- Add the egg and beat well.
- Stir in flax seed or vegetable oil and honey.
- In a small bowl, combine the oats, flour, cinnamon and baking soda; stir into creamed mixture just until blended.
- Gently stir in raisins.
- Press mixture into prepared dish.
- Bake for 14 to 18 minutes or until set and edges are lightly browned.
- Cool on wire rack.
- Glaze, if desired.
- Cut into bars.
