Creamy Holiday Fruit Salad
- 1 (20 oz.) can pineapple tidbits, undrained
- 3 egg yolks
- 2 Tbsp. sugar
- 1/8 tsp. salt
- 2 Tbsp. white vinegar
- 1 Tbsp. butter or margarine, melted
- 1 (16 1/2 oz.) can pitted light sweet cherries
- 2 c. miniature marshmallows
- 1 c. whipping cream, whipped
- Drain pineapple, reserving 2 tablespoons juice.
- Set aside. Combine egg yolks, sugar and salt in a heavy saucepan.
- Gradually add reserved pineapple juice, vinegar and butter.
- Cook over medium heat until thickened, stirring constantly.
- Remove from heat; cool.
- Combine pineapple, cherries and miniature marshmallows in a bowl.
- Fold egg mixture into whipped cream. Pour over fruit, stirring gently to coat.
- Cover and chill 8 hours.
