Golden Treasure Cake
- 6 eggs
- 3/4 tsp. cream of tartar
- 1 1/2 c. sugar, plus 2 Tbsp., divided
- 1 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1/2 c. water
- 1 tsp. Watkins orange flavored unsweetened punch concentrate
- 1 tsp. Watkins lemon extract
- 3/4 tsp. Watkins rum extract
- 1/2 c. sugar
- 1/3 c. Watkins vanilla dessert mix
- 2 Tbsp. apricot preserves
- 1 1/2 c. water
- 2 Tbsp. butter
- 1 tsp. Watkins orange extract
- 1/2 tsp. Watkins rum extract
- 1 c. whipping cream
- Separate eggs, placing whites in large mixer bowl, yolks in small mixer bowl.
- Add cream of tartar to whites; beat at high speed until foamy.
- Gradually add 3/4 cup of the sugar; beat until stiff.
- To yolks, add flour, 3/4 cup sugar plus 2 tablespoons sugar, salt, water, orange concentrate and extracts.
- Blend at low speed until moistened; beat 1 minute at medium.
- Pour over whites. By hand, fold batter gently and thoroughly into whites, just until well blended.
- Pour into ungreased 10-inch tube pan.
- Bake at 350u0b0
- for 50 to 55 minutes, until top springs back when touched lightly, invert and cool.
