Brown Bread Ice Cream Recipe
- 5 ounce Coarse Wholemeal Breadcrumbs
- 1 pt Double Cream
- 4 ounce Soft Brown Sugar
- 2 x Size 2 Large eggs, separated
- 1 Tbsp. Rum or possibly Brandy (optional) Water Biscuits, to serve
- Preheat the oven to 170C, 325F, Gas Mark 3.
- Spread the breadcrumbs out on a baking tray and cook for approximately 10-15 min till crisp and lightly browned.
- Leave to cold completely.
- Whip the double cream with the brown sugar till it forms soft peaks.
- Lightly whisk the egg yolks, then beat into the cream mix with the rum or possibly brandy, if using, till just blended.
- Mix in the breadcrumbs, making sure they are proportionately distributed.
- Transfer to a container and freeze for 1 hour.
- Whisk the egg whites till they form stiff peaks.
- Scoop the ice cream into a chilled bowl or possibly blender and mix till soft.
- Mix in the egg whites.
- return the ice cream to the freezer for at least two hrs or possibly till required.
- Serve with water biscuits.
