Borscht Stew (Gluten, Dairy Free)
- 2 beets, cut in one inch cubes
- 2 potatoes, cut in one inch cubes
- 2 stalks celery, chopped
- 2 carrots, chopped
- 2 cups loosely packed greens
- 2 cups vegetable broth
- 2 bay leaves
- 13 cup kielbasa, in chunks
- bring ingredients to a boil, then simmer for about 20 minutes.
- add any veggies you like.
