Grandma'S Refrigerator Oatmeal Cookies
- 1 3/4 c. shortening
- 1 c. brown sugar
- 1 c. white sugar
- 2 eggs
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. soda
- 3 Tbsp. hot water
- 1 c. nutmeats
- 1 c. raisins
- 1 c. semi-sweet chocolate morsels (optional)
- 3 c. oatmeal
- Cream shortening and sugar; add eggs and mix well.
- Dissolve soda in hot water and add alternately with rest of dry ingredients.
- Add nuts, raisins and oatmeal (and chocolate morsels).
- Shape in rolls; wrap in wax paper and put in refrigerator.
- (Or drop teaspoonful at a time on cookie sheet if baking immediately.)
- If in refrigerator, slice and bake as desired in medium oven, 350u0b0, until desired consistency, about 12 to 15 minutes.
