Avocado Hummus Cucumber Bites
- 30 ounces, weight Chick Peas
- 3 cloves Garlic
- 2 whole Avocado
- 1 teaspoon Onion Powder
- 4 Tablespoons Lime Juice
- 2 Tablespoons Tahini
- 1/2 teaspoons Cumin
- 1/2 cups Low Fat Yogurt
- 1 sprig Cilantro
- 2- 1/2 whole Cucumbers, To Serve
- 1 whole Roasted Red Pepper, Chopped, For Garnish
- Place chick peas and garlic in a food processor and puree until semi-smooth.
- (I like mine a bit chunky.)
- Add remaining ingredients (except cucumber and roasted red pepper) and puree until smooth.
- (Note: I hand-mashed the avocado and spices so I could make it a bit chunkier.)
- Add more salt, pepper and lime juice if preferred.
- Set up cucumbers on a plate or wooden plank.
- Add a dollop of hummus and chopped red pepper to garnish.
- Enjoy!
- Cover remaining hummus with foil or wrap and chill until you are read to eat it.
- As I mentioned before, its great with chips, pita or even veggies!
