Avocado Hummus Cucumber Bites

  1. Place chick peas and garlic in a food processor and puree until semi-smooth.
  2. (I like mine a bit chunky.)
  3. Add remaining ingredients (except cucumber and roasted red pepper) and puree until smooth.
  4. (Note: I hand-mashed the avocado and spices so I could make it a bit chunkier.)
  5. Add more salt, pepper and lime juice if preferred.
  6. Set up cucumbers on a plate or wooden plank.
  7. Add a dollop of hummus and chopped red pepper to garnish.
  8. Enjoy!
  9. Cover remaining hummus with foil or wrap and chill until you are read to eat it.
  10. As I mentioned before, its great with chips, pita or even veggies!
