Apricot Almond Chicken

  1. In a shallow bowl, combine the first five ingredients; transfer 1/2 cup to a serving bowl and set aside.
  2. Dip chicken in remaining apricot mixture.
  3. Place in 9 X 13 inch baking dish coated with cooking spray.
  4. Sprinkle almonds over chicken; drizzle with EVOO.
  5. Bake, uncovered, at 350 degrees for 30-35 minutes or until juices run clear.
  6. Serve with reserved apricot sauce.
  7. Serves 4.
