Cheesy Enchiladas

  1. In a saucepan, combine tomato sauce, water and enchilada seasoning mix; simmer 5 to 10 minutes.
  2. Meanwhile, brown ground beef; drain.
  3. Add 1 cup tomato sauce mixture to beef; simmer 5 minutes.
  4. Soften tortillas, one at a time, in remaining sauce mixture.
  5. Spoon beef mixture down center of each tortilla; sprinkle with cheese and olives.
  6. Reserve 1/2 cup cheese and 2 tablespoons olives for garnish.
  7. Roll up and place seam side down in baking dish.
  8. Pour remaining sauce over top; sprinkle with reserved cheese and olives.
  9. Bake in 350u0b0 oven for 25 to 30 minutes.
  10. Or microwave, uncovered, on High 8 to 10 minutes.
  11. Makes 4 to 6 servings.
