Smashed Bacon Ranch Potatoes
- 1 12 lbs potatoes, cut into 1 . 5-inch pieces
- 5 slices smoked bacon
- 14 cup ranch dressing
- 2 tablespoons buttermilk or 2 tablespoons whole milk
- 1 tablespoon white wine vinegar
- Cook potatoes in boiling salted water until very tender, 15-20 minutes.
- Drain; return to saucepan and mash coarsely.
- Cook bacon until browned; drain & crumble.
- Pour off drippings from skillet leaving clinging particles in skillet.
- add potatoes, salad dressing, milk and vinegar to skillet, stir until well blended.
- Cook, stirring constantly until hot.
- Add salt & pepper to taste.
