Never-Fail Divinity
- 3 c. sugar
- 1/2 c. water
- 1/2 c. white Karo
- 2 large egg whites
- 1 tsp. vanilla
- 1 or more c. nuts
- Combine sugar, water and Karo in saucepan over high heat. Stir only until sugar dissolves.
- While syrup is cooking, beat egg whites in large mixer bowl until stiff on high speed.
- Be sure bowl and beaters are grease free.
- Cook syrup to 240u0b0.
- Pour about 1/2 of syrup over egg whites, beating constantly with mixer. Return syrup to high heat and cook to 265u0b0.
- Pour over mixture in bowl, beating constantly.
- Do not scrape syrup pan.
- Add vanilla and beat to mix.
- Remove bowl from mixer and beat with wooden spoon until candy starts to lose gloss.
- Stir in nuts and continue to beat until candy holds shape when dropped from spoon.
- Drop on waxed paper.
