Pigs in Blankets
- 16 slices bacon
- 16 sausages
- 2 tablespoons thyme
- salt
- pepper
- oil
- Preheat the oven to 200C/Gas 6.
- Stretch the bacon rashers by running the blunt side of a kitchen knife along each one (this will stop them from shrinking when cooked).
- Place the sausages on a clean work surface and sprinkle with the thyme.
- Roll a stretched rasher around each sausage and place in a non-stick roasting tin, seam-side down.
- Season and spray with oil.
- Bake in the oven for 20 minutes, or until cooked through and the bacon is crisp and golden.
- Serve immediately.
