Irish Soda Bread
- 4 c. sifted flour
- 4 tsp. baking powder
- 1 tsp. salt
- 1/4 c. sugar
- 2 Tbsp. caraway seeds
- 1 c. raisins
- 1 1/3 c. sour milk (or regular milk, add 2 Tbsp. white vinegar)
- 1/3 c. margarine
- 1 tsp. baking soda
- 1 egg
- Preheat oven to 375u0b0.
- Sift flour, baking powder, salt and sugar; add caraway seed.
- Work butter in dry ingredients until it feels like cornmeal.
- Add egg to milk, mix well.
- Add baking soda to milk mixture, will form bubbles.
- Stir and add all at once to dry ingredients.
- Mix with fork until well blended.
- Dough will be sticky.
- With floured hands, form into a ball.
- Place in lightly buttered pie plate or cookie pan.
- Flatten slightly, cut cross in dough 1/4-inch deep.
- Sprinkle flour over top of loaf.
- Bake at 375u0b0 for 30 to 35 minutes.
