White Chili
- 1 Cup chopped onion
- 2 cloves garlic, minced
- 2 1/2 tsp. ground cumin
- 1/2 tsp. dried oregano, crushed
- 2 Tbsp. olive oil
- 4 chicken breasts, skinned and boned
- 2 cup chicken broth
- 1 Cup water
- 1 tsp. lemon pepper
- 1 (4 oz.) can dried green chilies, undrained
- 2 (15 oz.) cans great northern beans, undrained
- 2 Tbsp. lemon juice
- 2 (9 oz.) packages frozen shoepeg white corn, thawed
- salt and pepper to taste
- shredded monterey jack cheese
- tortilla chips
- sliced green onions
- Cook and stir onion, garlic, cumin and oregano in olive oil in large saucepan until onion is tender.
