Corn Avocado Salsa
- 1/4 cups Fresh Lime Juice
- 2 Tablespoons Olive Oil
- 2- 1/2 teaspoons Sugar
- 1/2 teaspoons Salt
- Fresh Cracked Black Pepper
- 1 cup Corn, Frozen (thawed), Canned (drained) Or Fresh
- 1 Roma Tomato, Chopped
- 1 Avocado, Peeled, Pitted And Chopped
- 1/4 cups Red Onion, Finely Chopped
- 1/4 cups Fresh Parsley Or Cilantro, Chopped
- In a medium size bowl, whisk together lime juice, olive oil, sugar, salt and pepper.
- Gently stir in remaining ingredients.
- Serve!
