Red Snapper Fillets in Artichoke Butter

  1. Pat fillets dry with paper towels and place on flat baking dish.
  2. In a 4-cup measuring cup, saute butter, onion tops, parsley and garlic using microwave on High for 2 minutes.
  3. Add lemon juice, mushrooms, artichokes, salt and cayenne.
  4. Microwave on High 2 minutes or until heated.
  5. Pour over fish.
  6. Cover with waxed paper and cook 7 to 8 minutes or until fish flakes easily with fork.
  7. Let stand covered 3 minutes.
