Tom Yum Soup
- 2 cans Coconut Milk
- 1/2 cups Lime Juice
- 1 cup Chicken Broth
- 1 Tablespoon Sugar
- 3 Tablespoons Fish Sauce
- 3 Tablespoons Tom Yum Soup Mix (Thai Kitchen Brand)
- 1 Tablespoon Red Curry Paste (Thai Kitchen Brand)
- 2 whole Boneless Skinless Chicken Breats, Cut Up
- 1 can Bamboo Shoots
- 2 packages Fresh Mushrooms, Sliced
- Put all wet ingredients and sugar in a large pot.
- Heat to simmer.
- Add chicken, bamboo and mushrooms.
- Simmer until chicken is just done.
- Serve over cooked rice.
