Tabbouli
- 1/2 cup cracked wheat (bulgur) uncooked
- 1 cup vegetable stock boiling
- 2 tablespoons lemon juice
- 1/2 teaspoon soy sauce, tamari
- 1 each garlic cloves minced
- 1 dash cayenne pepper
- 1 each tomatoes diced
- 1/2 cup scallions, spring or green onions chopped
- 1/2 cup parsley leaves minced
- 1/4 cup mint leaves fresh, chopped
- Soak the bulgur in the hot stock for 30 minutes.
- Combine the lemon juice, soy sauce, garlic, and cayenne in a small jar with a tight-fitting lid and shake vigorously to blend; set aside.
- Drain the bulgur and combine it with the tomato, green onions, parsley, and mint.
- Add the dressing and toss thoroughly.
- Serve chilled on salad plates with romaine lettuce.
