Mushroom & Swiss Cheese Quiche
- 1 c. mushroom, sliced thin
- 1 1/2 Tbsp. butter
- 2 slices bacon, diced
- 1 c. swiss cheese, cubed
- 1 onion, minced
- 1 10 inch pastry shell, baked
- 2 c. heavy cream
- 1/2 tsp. nutmeg
- 1/2 tsp. pepper
- 4 eggs, lightly beaten
- diced red pepper
- sliced black olives
- Saute mushrooms in butter for 3 minutes.
- In another pan, saute bacon until crisp and drain on absorbent paper.
- Combine mushrooms and bacon; add cheese and onion.
- Turn mixture into pie shell.
- Stir cream, nutmeg and pepper into eggs.
- Pour mixture into pie shell.
- Bake at 400 degrees for 10 minutes; reduce heat to 300 and bake 30 minutes longer. Garnish with red pepper and black olives.
- Makes 8 large servings.
