Mushroom & Swiss Cheese Quiche

  1. Saute mushrooms in butter for 3 minutes.
  2. In another pan, saute bacon until crisp and drain on absorbent paper.
  3. Combine mushrooms and bacon; add cheese and onion.
  4. Turn mixture into pie shell.
  5. Stir cream, nutmeg and pepper into eggs.
  6. Pour mixture into pie shell.
  7. Bake at 400 degrees for 10 minutes; reduce heat to 300 and bake 30 minutes longer. Garnish with red pepper and black olives.
  8. Makes 8 large servings.
