Kona K's Glazed Cherry and Apple Pork Chops

  1. Season each side of the pork chops with salt and pepper.
  2. Combine cranberry juice, Dijon mustard, corn starch, cherries and apples in a small pot.
  3. Heat over medium heat for about 5 minutes or until the liquid is thick and simmering gently.
  4. Remove sauce from heat and set aside.
  5. Spray a pan with non-stick cooking spray.
  6. Cook the pork chops over medium-high heat for about 4-5 minutes on each side or until cooked through (make sure there's no pink).
  7. If the chops start to stick, use a little olive oil.
  8. To serve: spoon some of the cherry-apple glaze over each pork chop.
