Craisy Oatmeal Cookies

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, sift together flour, soda, powder, cinnamon and salt.
  3. Set aside.
  4. In a large bowl, cream butter and sugar with a mixer.
  5. Mix in honey and vanilla until fluffy.
  6. Add eggs one at a time, until fully incorporated.
  7. Mix in coconut, dried cranberries, oats and rosemary.
  8. Fold dry ingredients into butter mixture.
  9. Form into balls, approximately 2 tablespoons.
  10. Place 2 inches apart on parchment lined cookie sheets.
  11. Bake until cookies turn golden, 13 to 15 minutes.
  12. Remove from oven to cooling rack.
  13. Let sit 5 minutes in the pan before transferring to a rack to cool completely.
