Mapo Tomato and Okra
- 2 medium Tomatoes
- 6 Okra
- 100 grams Ground pork
- 1/3 Japanese leek
- 1/2 clove Grated garlic
- 3 cm from a tube Grated ginger
- 100 ml Water
- 1 tsp Chicken soup stock granules
- 1 tbsp Soy sauce
- 1 tbsp Tianmianjiang
- 1 tbsp Mirin
- 1 tbsp Sake
- 1 pinch Sugar
- 1 Sesame seed oil
- Chop the Japanese leek and garlic finely.
- Roughly dice the tomatoes.
- Combine the seasonings.
- Rub the okra on a cutting board with salt to remove hair.
- Chop into slices about 5 mm thick.
- Heat some sesame oil in a frying pan.
- Add the Japanese leek, garlic and ginger and stir fry until fragrant.
- Cook the ground meat until browned and crumbly.
- Add the ingredients, along with the tomatoes and okra.
- Simmer until the liquid is reduced to your liking.
- Adjust the flavor with soy sauce and it's done!
