Mapo Tomato and Okra

  1. Chop the Japanese leek and garlic finely.
  2. Roughly dice the tomatoes.
  3. Combine the seasonings.
  4. Rub the okra on a cutting board with salt to remove hair.
  5. Chop into slices about 5 mm thick.
  6. Heat some sesame oil in a frying pan.
  7. Add the Japanese leek, garlic and ginger and stir fry until fragrant.
  8. Cook the ground meat until browned and crumbly.
  9. Add the ingredients, along with the tomatoes and okra.
  10. Simmer until the liquid is reduced to your liking.
  11. Adjust the flavor with soy sauce and it's done!
