Three Pepper Stroganoff
- 2 lb. round steak
- 5 Tbsp. cooking oil
- 1 large onion, chopped
- 1 lb. fresh sliced mushrooms
- 1/4 tsp. garlic powder
- 2 c. bell pepper, cut in thin strips (green, red, yellow)
- 1 can cream of mushroom soup (low-fat)
- 1 c. water
- 1/2 tsp. black pepper
- 1 1/2 tsp. salt
- 3/4 c. flour
- Cut meat into thin strips.
- Sprinkle meat with salt, pepper and garlic.
- Roll in flour.
- Brown meat slightly in oil.
- Remove meat and drain.
- Add onions and mushroom soup and water.
- Mix well.
- Place meat, mushrooms and onions in mixture.
- Simmer for 20 minutes.
- Add bell pepper strips.
- Cook 5 more minutes.
- Serve over noodles.
- Garnish with parsley, tomatoes and mushrooms. Serves 5 to 6.
