Cheesy Beef
- 1 12 lbs ground chuck
- 12 lb penne
- 12 cup parmesan cheese
- 1 lb Velveeta cheese
- 2 tablespoons dried parsley
- 12 onion, chopped
- 14 green red, yellow and orange bell pepper, chopped
- 1 tablespoon minced garlic
- 2 tablespoons salt
- 1 tablespoon pepper
- 1 cup marinara sauce or 1 cup pasta sauce
- 2 tablespoons extra virgin olive oil
- Pre-heat oven to 350 degrees.
- Cook pasta according to directions on box and set aside.
- Saute about a 1/4 of each pepper { you can exclude any peppers you don't like} in 1 to 2 tbls of the olive oil until soft.
- Next add the ground chuck, chopped onion, garlic, parsley, salt and pepper to taste.
- Mix well.While that is cooking slice the velveeta cheese.
- Add the cooked pasta to the baking dish then layer half the velveeta cheese on top.
- Once the ground beef is browned, drain then put back in pan, add the marinara and stir until heated thru.
- Put the beef mixture on top of the cheese and pasta.
- Now sprinkle parmesan cheese to taste {about 1/2 cup}.
- Cover with foil and bake for 25 minute Remove and put remaining velveeta cheese on top then put back in oven uncovered until melted thru.
- Remove from oven and serve.
