Just a Pizza Salad: No Salad on Crust...no Pasta...just Salad

  1. Cheese -- In a small pan (a pie plate or something similar works great), add the cheese, store bought dressing and a pinch of the red pepper flakes.
  2. Just toss to make sure everything is well combined.
  3. Cover with plastic wrap and marinate 1 hour to all day.
  4. Longer the better.
  5. Dressing -- Another easy component of this salad.
  6. Make the day before (just hold off adding the fresh basil until ready to serve).
  7. In a small measuring cup or bowl, mix the tomato juice, tomato paste, olive oil, red wine vinegar, lemon juice, garlic, and fresh basil.
  8. Just set to the side until you are ready to use.
  9. Crust -- In a small measuring cup or bowl, add the olive oil, pepper, and oregano and brush on a store bought pizza crust.
  10. Top with the grated cheese and bake according to package directions until crusty golden brown.
  11. Salad -- While your pizza crust is browning up - make your salad.
  12. To a large bowl, add the lettuce, onion, pepperoni, ham, red peppers, and olives.
  13. Remove the mozzarella from the marinade with a slotted spoon and add to the salad.
  14. You don't want any of the marinade in your salad.
  15. Then top with some of the tomato dressing and toss well.
  16. Cut the pizza crust with your pizza wheel and add the warm cheesy dough to the salad.
  17. You can cut it as small as you want, almost like a bread salad, or you can cut it in wedges.
  18. I personally cut mine in 1" pieces.
  19. Toss well.
  20. Serve -- Nothing more needed.
  21. It is just a really nice salad.
  22. Last time I served this with a side of roasted corn chowder to my friends.
  23. Great dinner and it is best just served family style which makes it great for company.
