Steve'S Triangle Chili
- 3 cans tomatoes (14 oz. each)
- 1 can tomato paste (6 oz.)
- 2 cans beans (redskin, kidney, etc.)
- 1 medium to large onion, chopped
- 1 green pepper, chopped
- 2 sweet peppers, chopped
- 2 hot peppers, sliced
- 6 medium garlic buds
- 1 1/2 lb. ground meat (beef and pork)
- 1 can beer
- 2 Tbsp. oregano, crushed
- 1 Tbsp. basil, crushed
- 1/2 Tbsp. chili powder
- 1 Tbsp. cumin
- 1/2 Tbsp. red pepper
- 1/2 Tbsp. cinnamon
- 2 Tbsp. bacon fat
- Saute 3 buds garlic in olive oil, brown meat in oil; drain. Slice 3 more garlic buds, put in pot.
- Add the meat, canned tomatoes, onion, all the peppers and the beer.
- Bring to a boil, add all the spices and stir, reduce heat to low, add 2 bay leaves and the bacon fat.
- Simmer 2 hours.
- Add beans, simmer another hour.
- Use cornmeal to thicken to taste.
