Pimm and Proper Ice Cream Floats
- 1 pound strawberries, hulled and chopped
- 1/4 cup sugar
- 1 cup Pimm's No. 1 gin
- 8 small scoops strawberry ice cream
- 1/2 liter lemon-lime soda
- 4 strawberries, for garnish
- Make the syrup: In a small saucepan, combine the strawberries, sugar and 1/2 cup water.
- Bring to a boil over high heat, then reduce the heat to medium and simmer until thickened, about 20 minutes.
- Strain, return to the saucepan and reduce for 10 more minutes, or until the syrup is thick enough to coat a spoon.
- Chill until ready to serve.
- Make the floats: Mix 1 tablespoon strawberry syrup with 2 tablespoons gin in each glass; add 2 scoops ice cream, top with the soda and garnish with a strawberry.
