Grape Galette
- 1 cup Whole Wheat Flour
- 1/4 teaspoons Salt
- 1/2 cups Cooked Sweet Potato
- 1/4 cups Olive Oil
- 1/2 Tablespoons Water
- 1 whole Orange
- 4 cups Seedless Black Grapes
- 13 cups Crumbled Feta Cheese
- 13 cups Shredded Mozzarella Cheese
- 1/4 teaspoons Orange Zest
- Preheat oven to 375 degrees F.
- In a medium sized bowl combine the salt and flour; cut in the cooked sweet potato (you can bake it, or use canned).
- Mix in the olive oil.
- Add the water only if the pie dough is too dry.
- Roll out the pie dough on a piece of parchment paper until it is about 12 inches in diameter.
- Place the crust and parchment paper on a baking sheet.
- Dont worry if the dough is wider than the baking sheet.
- Peel the orange and separate its segments.
- In a large bowl combine all of the remaining ingredients except the orange segments.
- Pile the mixture in the middle of the dough and spread it out evenly, leaving a 1 1/2 inch border of dough all around.
- Place the orange segments on top of the grape mixture in a circular pattern.
- Fold the border of dough up towards the center onto the grapes (but leave some of the center exposed).
- Seal any creases or cracks, using water to ensure the dough sticks to itself.
- Bake at 375 degrees F for 30 minutes or until crust is done.
- Enjoy warm.
