Grape Galette

  1. Preheat oven to 375 degrees F.
  2. In a medium sized bowl combine the salt and flour; cut in the cooked sweet potato (you can bake it, or use canned).
  3. Mix in the olive oil.
  4. Add the water only if the pie dough is too dry.
  5. Roll out the pie dough on a piece of parchment paper until it is about 12 inches in diameter.
  6. Place the crust and parchment paper on a baking sheet.
  7. Dont worry if the dough is wider than the baking sheet.
  8. Peel the orange and separate its segments.
  9. In a large bowl combine all of the remaining ingredients except the orange segments.
  10. Pile the mixture in the middle of the dough and spread it out evenly, leaving a 1 1/2 inch border of dough all around.
  11. Place the orange segments on top of the grape mixture in a circular pattern.
  12. Fold the border of dough up towards the center onto the grapes (but leave some of the center exposed).
  13. Seal any creases or cracks, using water to ensure the dough sticks to itself.
  14. Bake at 375 degrees F for 30 minutes or until crust is done.
  15. Enjoy warm.
