Stuffed Sweet Potatoes
- 3 large sweet potatoes
- 1 tablespoon prepared mustard
- 12 teaspoon salt
- 18 teaspoon pepper
- 2 tablespoons brown sugar
- 2 tablespoons butter
- 13 cup sweet milk
- 12 cup ham, diced fine
- 12 dozen marshmallows
- Bake sweet potatoes until soft; cut in half and scoop out pulp.
- Mash thoroughly, add mustard, salt (omit if limiting sodium), pepper, and sugar.
- Heat butter with milk until butter is melted; add to potatoes & beat until fluffy.
- Stir in ham.
- Pile back into shells & top each with 2 marshmallows.
- Bake in moderate oven, 350 degrees, for 20 minutes.
