Miramichi Fiddlehead Muffins

  1. Grease and flour a 12 cup muffin tin.
  2. Preheat oven to 350F.
  3. Put all seven dry ingredients in a bowl and stir well.
  4. Add egg, oil, and milk in a bowl and whisk together well.
  5. Add sugar and fiddleheads.
  6. Mix egg mixture to dry ingredients and mix well.
  7. Bake for 20 - 25 minutes.
