Sour Cream Brunch Cake Recipe
- 1 pkg. yellow cake mix
- 1 c. lowfat sour cream
- 4 Large eggs
- 1/2 c. oil
- 1 pkg. (4 serving size) vanilla instant pudding
- 2 teaspoon vanilla
- 1/3 c. sugar
- 1 teaspoon cocoa
- 1 teaspoon cinnamon
- 1/2 c. minced nuts
- Combine dry cake mix, lowfat sour cream, Large eggs, oil, pudding mix and vanilla in large mixer bowl.
- Beat 4 min at medium speed.
- Turn 1/2 of batter into greased and floured 10" tube pan.
- Combine sugar, cocoa, cinnamon and nuts.
- Sprinkle 1/2 of this mix over batter in pan.
- Add in remaining batter and sprinkle with remaining topping.
- Bake at 350 degrees for 50 to 55 min.
- Cold cake completely on rack before removing from pan.
