Rack of Lamb With Herbed Salt
- 2 lamb racks, - 6 cutlets each
- 2 tablespoons sea salt
- 1 teaspoon thyme leaves, finely chopped
- 1 teaspoon rosemary, finely chopped
- 1 teaspoon oregano leaves, finely chopped
- 1 garlic clove, finely chopped
- black pepper
- Preheat oven to 200 C.
- Set lamb in roasting pan.
- Combine salt with all other ingredients.
- Rub salt into lamb.
- Place in oven, cook 30 minutes until pink.
- allow to rest 10 minutes.
- Carve racks into groups of 3 chops each.
