Italian Roasted Potatoes

  1. Preheat oven to 400F.
  2. Spray an 11x13" baking pan with cooking spray (Pam or similar).
  3. Set aside.
  4. Place cut potatoes in a large bowl and drizzle with the Olive oil.
  5. Stir well to make sure they are evenly coated.
  6. Sprinkle the packet of Good Seasons over the potatoes and mix well, making sure the potatoes are evenly coated.
  7. Pour mixture into prepared pan and place in oven.
  8. Bake for 35 minutes, stir and bake an additional 20 minutes.
  9. Remove from oven and immediately toss with shredded cheese.
  10. Sprinkle with sliced scallions and serve.
