Italian Roasted Potatoes
- 5 medium russet potatoes, scrubbed and cut into chunks
- 1/4 cup olive oil
- 1 packages Good Seasons Italian or Zesty Italian dressing mix
- 1 cup Monterey Jack cheese, shredded
- 5 green onions/scallions, sliced
- 1 Cooking spray
- Preheat oven to 400F.
- Spray an 11x13" baking pan with cooking spray (Pam or similar).
- Set aside.
- Place cut potatoes in a large bowl and drizzle with the Olive oil.
- Stir well to make sure they are evenly coated.
- Sprinkle the packet of Good Seasons over the potatoes and mix well, making sure the potatoes are evenly coated.
- Pour mixture into prepared pan and place in oven.
- Bake for 35 minutes, stir and bake an additional 20 minutes.
- Remove from oven and immediately toss with shredded cheese.
- Sprinkle with sliced scallions and serve.
