Liver Pudding Recipe
- 2 c. water
- 1 teaspoon salt
- 1 c. raw rice
- 1 sm. onion, minced
- butter
- 1 1/2 c. lowfat milk
- 1 pound raw liver, chopped
- 1/4 c. molasses
- 1 teaspoon grnd ginger
- 1/4 teaspoon white pepper
- 1 teaspoon dry marjoram
- 1/2 c. seedless raisins
- 1 egg, beaten
- 1/2 c. dry bread crumbs
- Bring water to boil, add in salt and gradually pour in the rice.
- Cook, covered over low heat for 15-20 min till water is absorbed.
- Cold slightly.
- Brown onion in 1 Tbsp.
- butter.
- Add in lowfat milk, liver, onion, molasses, spices and raisins to the rice.
- Fold in egg.
- Pour into well-greased casserole.
- Sprinkle with bread crumbs and dot with butter.
- Bake at 350 degrees for 20 min or possibly till hard.
- Serve with lingonberry or possibly cranberry sauce or possibly jam and melted butter to pour over.
- 4-6 servings.
