Cajun Bayou Casserole
- 1 8-oz. cream cheese
- 1 block + 2 Tbsp. butter
- 1 lb. peeled shrimp, raw
- 1 large chopped onion
- 1 chopped green pepper
- 3 ribs chopped celery
- 1 can cream of mushroom or cream of shrimp soup
- 1/2 tsp. garlic powder
- Tony's seasoning to taste
- 1 tsp. red pepper
- 1 pint crabmeat (may substitute extra shrimp)
- 2 cups cooked rice
- 1 cup grated Cheddar cheese
- about 3/4 cup crushed cracker crumbs
- Melt cream cheese and 1 block butter and set aside.
- (Use microwave oven.)
- Saute shrimp and seasonings in 2 Tbsp. butter until shrimp are cooked and seasonings are wilted.
- Add cream cheese mixture.
- Add soup and season to taste.
- Mix in rice and crabmeat and pour into casserole dish.
- Top with grated cheese and cracker crumbs.
- Bake at 350 degrees about 20-30 minutes.
- Makes 4-6 servings.
