Garlic Mashed Potatoes

  1. Put the potatoes, garlic and shallots in a large sauce pan.
  2. Cover with cold water at least 2 inches over the potatoes.
  3. Cover and bring to a boil over medium heat.
  4. Once it reaches a boil, remove lid, reduce heat to low and cook for 10-15 minutes, until the potatoes and garlic are soft.
  5. Drain well and pour potatoes and garlic back into saucepan.
  6. Add butter.
  7. Mash potato mixture well.
  8. Add the rest of the ingredients except for the milk.
  9. Mix well with a wooden spoon.
  10. Return pan to low heat and add the milk/cream slowly, stirring constantly.
  11. Once potato mixture is creamy, remove from heat and serve.
