Rachs Southern Pasta
- 2 cups Whole Wheat Elbow Macaroni
- 1 pound Sausage - We Use Eckrich But Any Kind You Like Works
- 1 can (15 Oz. Can) Black Beans
- 1 can (14.5 Oz. Can) Diced Tomatoes
- 1 cup Frozen Corn
- 2 pinches Cumin
- 2 pinches Garlic Powder
- 1 pinch Chili Powder
- 1/2 cups Water
- Optional Garnish: Shredded Cheddar Cheese, Grated Parmesan Cheese
- Add macaroni to the bottom of a large saucepan or skillet.
- Slice sausage into 1/4 inch rounds.
- I use the kind that is already pre-cooked to save on time.
- Add the beans, sausage, tomatoes, corn and spices to the pasta, along with the water.
- Bring everything to a boil, then cover and simmer for 15-20 minutes until pasta is done.
- Serve with shredded cheddar cheese or grated parmesan cheese.
- I add a splash of Tabasco to my plate!
