Fried Rice Chicken Casserole
- 2 c. cooked, cubed chicken
- 1 Tbsp. lemon juice
- 1 can mushroom soup
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 c. mayonnaise
- 1/2 c. almond slivers
- 1/2 c. water
- 3 Tbsp. shortening
- 1/2 c. chopped onion
- 2 c. rice
- 1 Tbsp. salt
- 6 c. water or chicken broth
- 1 c. crushed potato chips
- Combine first 8 ingredients in large bowl.
- Set aside.
- In a large skillet, melt shortening and saute onion and rice until rice is yellow.
- Add salt and water or broth.
- Cover and simmer for 20 minutes in large casserole.
- Place half of rice, chicken mixture, then remaining rice.
- Sprinkle with crushed chips.
- Bake at 350u0b0 for 30 to 45 minutes.
- Serves 8.
