Fried Rice Chicken Casserole

  1. Combine first 8 ingredients in large bowl.
  2. Set aside.
  3. In a large skillet, melt shortening and saute onion and rice until rice is yellow.
  4. Add salt and water or broth.
  5. Cover and simmer for 20 minutes in large casserole.
  6. Place half of rice, chicken mixture, then remaining rice.
  7. Sprinkle with crushed chips.
  8. Bake at 350u0b0 for 30 to 45 minutes.
  9. Serves 8.
