Non-fried! Creamy Cheese Croquettes
- 5 to 6 Potatoes (medium)
- 1 pinch each Salt and pepper
- 3 tbsp Milk
- 3 tbsp Fresh cream (or milk)
- 1 Easy melting cheese
- 12 tbsp Panko
- 2 tbsp Flour
- 2 tbsp Water
- 1 Egg
- Peel the potatoes and cut into small pieces.
- Place in heatproof dish and drizzle with 2 tablespoon water (not listed).
- Cover with plastic wrap and microwave for 10 minutes in 600 W.
- Dry-roast the panko in a frying pan over medium heat while mixing constantly with a spatula.
- When the panko are golden brown, take them out immediately into a bowl and let cool.
- Mash the potatoes from Step 1 with a masher or spatula while it's hot.
- Combine salt, pepper, and fresh cream with potatoes from Step 3.
- See hints and tips if you're only using milk.
- Divide the potatoes from Step 4 into 4 portions.
- Form into patties and cover the cheese so it won't leak out when you're frying them.
- Here, I tried making 6 patties.
- Combine the ingredients in a bowl to make coating mixture.
- Dredge the patties made in Step with the prepared batter then coat thoroughly with panko
- Bake 15 to 20 minutes in 200C oven, and it's done.
- Bake for 15 to 20 minutes as well when you're using a toaster oven.
