Pumpkin Bread With Glaze
- 2 c. pumpkin
- 4 eggs
- 1 c. oil
- 1/3 c. water
- 3 1/2 c. flour
- 3 c. sugar
- 3/4 tsp. orange peel
- 3/4 tsp. allspice
- 3/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 1/8 tsp. ginger
- 1/2 to 3/4 c. pecan chips
- 2 tsp. soda
- 1 1/2 tsp. salt
- Combine pumpkin, eggs, oil and water.
- Mix well.
- Add orange peel and mix.
- Sift together dry ingredients.
- Add nuts to pumpkin mixture and mix.
- Add to dry ingredients and mix well.
- Pour into 2 greased and floured 9 x 5-inch loaf pans.
- Bake in preheated 350u0b0 oven for 70 minutes or until done.
- Bread springs back when lightly touched in the center.
- Cool for 15 minutes in pans. Remove bread and cool on wire rack.
- Glaze cooled loaves.
