Feta Stuffed Mushrooms
- 4 portabella mushrooms
- 1 tablespoon olive oil
- 4 ounces crumbled feta with herbs
- 14 cup chopped olive
- 2 tablespoons sun-dried tomatoes, chopped
- Remove and discard mushroom stems.
- Place mushrooms stem side up on cookie sheet and brush with oil.
- In small bowl, stir together cheese, olives and tomatoes.
- Divide filling among the mushrooms.
- Bake at 425 for about 10 minutes, or until heated through.
