Hearty Black Bean & Bacon Soup

  1. Cook and stir bacon in large saucepan on medium heat until crisp.
  2. Remove bacon from pan with slotted spoon; drain on paper towels.
  3. Discard all but 3 Tbsp.
  4. drippings from pan.
  5. Add onions, celery, carrots and garlic to drippings in pan; cook and stir 5 min.
  6. or until crisp-tender.
  7. Stir in beans, broth and pepper; simmer on low heat 15 min.
  8. Process soup in food processor or blender container until smooth.
  9. Return to pan.
  10. Stir in bacon and sherry; cook until heated through, stirring occasionally.
