Vinegar Pie
- 1 stick butter
- 1 c. sugar
- 2 eggs
- 3 tsp. vinegar
- 1 tsp. vanilla
- 1/2 c. chopped pecans
- zucchini, sliced in apple size slices
- 2 Tbsp. lemon juice per pie
- dash of cinnamon
- a little salt
- 1 unbaked pie shell
- 1 stick margarine
- 1 c. flour
- 1 c. sugar
- sprinkling of cinnamon
- Slice the zucchini in apple size slices; toss them in lemon juice.
- Add dash of cinnamon and a little salt.
- Pile the mixture into an unbaked pie shell.
- Top it with the margarine, flour, sugar and a sprinkling of cinnamon mixed together.
- Bake as you would for ordinary apple pie at 425u0b0 for 40 minutes.
- Cover the rims of your crust with aluminum foil if crust gets too brown.
