Watermelon Bliss
- 1 pt. pistachio ice cream
- 6 drop green food coloring
- 1 pt. vanilla ice cream
- 1 pt. strawberry ice cream
- 6 drop red food coloring
- 1/2 c. mini chocolate chips
- Chill a 2-quart bowl in the freezer for 1 hour.
- Toward the end of the chilling time, in a separate bowl, combine pistachio ice cream and green food coloring; beat with electric mixer on low speed for 30 seconds, or until smooth.
- Spread green-tinted ice cream evenly around the inside surface of chilled bowl with the back of a spoon.
- Freeze 1 to 2 hours, or until firm.
- Repeat process with vanilla ice cream; return to freezer until this layer is firm.
- Using electric mixer, beat strawberry ice cream with red food coloring until smooth.
- Fold in chocolate chips and smooth into center cavity of ice cream bowl.
- Cover with plastic wrap and freeze until very firm.
- When ready to serve, dip bottom of bowl briefly into a larger bowl filled with warm water to loosen.
- Invert onto serving plate and slice into 8 pieces.
