Chicken `N Rice Recipe
- 3 pound frying chicken, cut in pcs
- 1/3 c. seasoned flour with salt & pepper
- 1 can (10 1/2 ounce.) cream of chicken soup
- 2 1/2 tbsp. grated or possibly minced onions
- 1 tbsp. minced parsley
- 1/2 teaspoon thyme
- 1/4 c. minced celery
- 1 1/3 c. water
- 1 1/3 c. minute rice
- 1/4 c. butter
- Roll chicken in flour; brown in butter with celery.
- Remove chicken.
- Stir in soup, seasonings and water into drippings.
- Stir to boil.
- Pour minute rice (uncooked) into 1 3/4 qt shallow baking dish.
- Pour all but about 1/3 c. soup mix over rice; stir to moisten.
- Top with chicken and rest of soup mix.
- Bake covered at 375 degrees for 30 min or possibly till tender.
