Jumbo Prawn Curry
- 2 cups shrimp
- 3 tablespoons coconut, shredded (desiccated)
- 1 pinch turmeric
- 1 cup coconut milk
- 1/2 each onions chopped
- 2 each red chilis, dried
- 1/4 teaspoon ginger paste
- 1/4 teaspoon garlic paste
- 2 tablespoons vegetable oil
- 1/2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon tamarind
- 1 dash coriander chopped
- Heat oil in a pan and fry the onions and red chilly until the onions are dark brown in colour
- Add turmeric, ginger-garlic paste, coriander powder, curry powder, desiccated coconut, tamarind paste, salt and saute for a few minutes you can sprinkle some water if the mixture tends to stick to the pan.
- Take this off the hob and let it cool.
- Blend the mixture until it forms a smooth paste.
- Transfer the mixture back to the pan and heat it
- Put the prawns and cook for a couple of minutes.
- Pour in the coconut milk and add some chopped coriander
- Let it simmer and cook for 5 to 6 minutes.
- SERVE HOT preferably with rice !
