Sweet And Sour Cabbage
- 2 Tbsp. unsalted butter
- 3 c. thinly shredded (1/4-inch) red cabbage (about 1/4 medium
- 1 Granny Smith apple, peeled, cored and finely diced
- 1 medium onion, thinly sliced
- 2 Tbsp. red wine vinegar
- 2 Tbsp. dark brown sugar
- 1 Tbsp. golden raisins
- 1/2 tsp. salt
- 1/8 tsp. ground allspice
- 1/4 tsp. freshly ground pepper
- Melt the butter in microwave-safe 2-quart glass casserole with a lid, about 1 minute.
- Stir in cabbage, apple, onion, vinegar, brown sugar, golden raisins, salt and allspice.
- Cover and microwave on High power for 8 to 10 minutes, stirring 4 times until the cabbage is very soft.
- Let stand, covered, for 2 minutes.
- Add freshly ground pepper; taste and adjust seasonings.
- Serve hot or warm.
