Pepper Jack Shrimp and Grits

  1. Cook grits according to the package directions.
  2. Once grits have finished cooking, remove from heat and stir in butter and cheese.
  3. Heat a skillet over medium high heat.
  4. Add sausage to skillet (remove from casing if its in one) and cook until completely done.
  5. Add minced garlic and cook for 30 seconds.
  6. Add shrimp and cook until pink.
  7. Add lemon juice, wine and chives and cook until the liquid is absorbed, about 3 minutes.
  8. To serve, spoon grits into a bowl, top with shrimp and sausage mixture, garnish with chives, and devour.
